Chocolate Devils Food Cake:

Cake Flour-375g
Cocoa powder-60g
Salt-8g
Baking powder-12g
Baking soda-8g
Emulsified Shortening-220g

Sugar-500g
Skim milk-250g
Vanilla Extract-5g

Skim milk-188g
Eggs-250g

Yield- Two 9 inch round cake pans

Method:
1. Scale all ingredients accurately and have them at room temperature
2. Sift flour, b.powder, sugar, cocoa pwdr, b. soda, and salt into a mixing bowl and add the e. shortening. With the paddle attachment, mix at low speed for EXACTLY 2 minutes. Stop amd scrape the bowl and paddle. Mix again for exactly 2 minutes.
3. Add the first part of the skim milk and blend at low speed for 5 minutes exactly. Scrape down the sides of the bowl and the beater several times to ensure even mixing.
4. Combine the remaining skim milk and lightly beaten eggs. With the mixer running add this mixture to the batter in 3 parts. After each part, turn off the machine and scrape down the bowl. Mix in this step a total of 5 minutes.

The finished batter is usually quite liquid, so dont be worried. any questions just ask
